TENNY'S GREEK SALAD

Ingredients:

Spring mix greens (chopped) - 4 cups

Persian cucumbers (chopped) - 2 whole

Roma tomatoes (chopped)- 2 whole

Green bell pepper (chopped) - 1/2 cup

Kalamata olives (pitted and halved) - handful

Onions (chopped) - 1/2 cup

Feta cheese (crumbled) - 1/2 cup

Instructions:

Combine the ingredients, toss with Lemon Garlic to taste, and enjoy!

QUICK-CHICK SALAD

Ingredients:

Chickpeas (garbanzo beans) - 2 15 oz. cans

Black beans - 1 15 oz. can

Sweet corn - 1 8.75 oz. can

Sun-dried tomatoes (julienned) - 8 oz. jar

Onion (chopped) - 1 small

Instructions:

Drain and combine ingredients.

Toss with Zesty Cumin to taste and enjoy!

MEDITERRANEAN ARUGULA SALAD

Ingredients:

Baby arugula - 4 cups

Red (or green) seedless grapes (halved) - 1/2 cup

Pine nuts (toasted) - 1/2 cup

Feta cheese (crumbled) - 1/2 cup

Instructions:

On a bed of arugula, add in the grapes, pine nuts, and cheese.

Toss with Mediterranean Herb with sumac to taste. Enjoy!
